Worked well but went a bit too heavy on the cheese (I thought 3 x 1/2" boconcini would be OK).
Couldn’t find the semolina so used flour on the peel and te bastard stuck and folded up on itself, destination garden for the birds, second one worked well and looked like the video with the crispy top.
Will do this in the future and buy another bag of semolina for the peel to get it off evenly and easy.
Was the first wood fired for the season and the dough worked out after the advice offered from a much earlier post, weighed 250g flour (50:50 Plain and OO) and 180g water, bit of extra flour for kneading and shaping and not sticky.
